Eating more greens is the perfect way to kick off the new year in a healthier way. According to an article by Heather K. Vincent, Ph.D, in the Journal of Human Nutrition and Dietetics, eating more plant-based foods -- which are rich in substan zes called phytochemicals -- se~ms to prevent oxidative stress in the body, a process associated ~vith obesity and the onset of disease. Dr. Vincent suggests starting e ]ch meal with plant-based foods s~ch as leafy greens, fruits, vegetab es, nuts and legumes to make sure /ou get enough phytochemicals du=ing regular meals and snacks. Kale -- whether it's the curly, leaf or dinosaur variety -- is a gl choice when selecting a leafy gr, vegetable. The leaves freeze and actually taste sweeter more flavorful after being exp to a frost. Kale is a membe the Brassica family, which ~lso includes collard greens, cabbage and Brussels sprouts.
