If you're looking for ways to use your baskets of Easter eggs after the holidays are over, my recipe for Elegant Egg- Sicles is the answer! Using the recipes below and a variety of delicious dressings and toppings, you can transform hard- cooked eggs into beautiful Easter eggs, and after the holidays are over, create an elegant appetizer and a healthy snack. Happy Easter! ELEGANT EGG-SICLES 12 hard-cooked eggs (See tips below) Dipping sauces: mayo, mustard, sour cream and ranch-style dressing Topping Coatings: paprika, cayenne pepper, bacon bits, minced green onions, parsley, pesto, etc. 12 small appetizer or salad forks, or Popsicle sticks To Assemble the Egg-Sicles: Place the small forks or Popsicle sticks into the large end of the hard- cooked eggs. Place the egg-sicles on a decorative plate. Fill small bowls or saucers with mayo, mustard, sour cream and ranch-style dressing. Place the topping coatings of paprika, cayenne pepper, chopped bacon, green onions, parsley, pesto, etc. on individual saucers. Allow your guests to coat eggs with the dressing of their choice and then roll the egg-sicles in the topping coatings. Serves 6 to 12. Preparing Hard-Cooked Eggs: 1. Bring eggs to room temperature. 2. Place the eggs in room- temperature water in a large pot. 3. Bring to a boil then turn down to a low boil for 12 minutes. 4. Quickly chill the eggs in ice- cold water. 5. The eggs must be completely cool and dry to decorate successfully. 6. Hard-cooked eggs should be kept refrigerated and used within one week. 7. The greenish color around the yolk of hard-cooked eggs is a natural result of sulfur and iron reacting at the surface of the yolk. It may occur when eggs are cooked too long or at too high of temperature, or when there is a high amount of iron in continued on page 14 &
