Chef's Corner continued from page 6 1 teaspoon baking soda 1 teaspoon salt 2 large eggs, lightly beaten 2 cups crushed pineapple with juice 1/2 cup water 1 teaspoon vanilla or fresh lemon juice 1. Preheat the oven to 350 F. 2. Toast the wheat bran and the nuts together in a heavy, dry pan over medium heat for 3 to 5 minutes, stirring occasionally to keep from burning. Set aside to cool. 3. Sift the flours, baking powder, baking soda and salt into a large bowl. Mix in the toasted wheat bran and nuts. Add eggs, pineapple, water and vanilla or lemon juice. Mix together thoroughly. The dough should be moist and well-combined. 4. Scoop batter into a greased loaf pan. Bake for "1 hour, or until a toothpick or tester inserted in the middle of loaf comes out clean.
