Although broccoli isn't one of
former President George H.W.
Bush's favorite vegetables,
it's a popular choice for many
Americans. The average person
in the United States eats four
and one-half pounds of broccoli
a year. Broccoli is available
year round, but it's best during
the spring months and cooler
weather. Broccoli is rich in fiber
and might help reduce cholesterol
and fight other diseases. It takes 3
to 3 1/2 cups of broccoli to equal
the calcium in one cup of milk.
Broccoli was first grown wild
about 2,500 years ago .on the
island of Cyprus and in other
parts of the Mediterranean.
Broccoli has been grown in
America for about 200 years. The
first commercially grown broccoli
crop was harvested in New York.
Broccoli was first planted in
California the 1920s, and now 90
percent of the fresh broccoli sold
in the U.S. is grown in California's

U.S. Department of Agriculture.
Broccoli has become one of
the best-selling members of the
Brassica genus family, which
also includes cabbage, Brussels
sprout, cauliflower and cruciferous
vegetables. One of the most
common types of broccoli sold
in the U.S. is sprouting, or Italian
green, broccoli which has light-
green stalks topped by umbrella-
shaped clusters of purplish-
green florets. It also is known
as C alabrese, after the Italian
province of Calabria, where it was
first grown.
When buying broccoli look for
firm, compact clusters of small
flower buds. The bud clusters
should be dark or sage green, or
even green with a purplish tinge.
Broccoli adds vitamins, flavor
and texture to my recipe for
Broccoli Pasta Salad with Zesty
Lemon Parsley Dressing. This
salad is the perfect "make ahead"
dish for a light lunch or as a side
dish for a main course. Best of all,
it tastes even better the next day.
BROCCOLI PASTA SALAD
WITH ZESTY DRESSING
When prepping the broccoli,
keep the stems and florets
separate, as the stems need a
little more time to cook.
2 teaspoons salt
12 ounces whole-wheat elbow
or rotini pasta or shell pasta
1 1/2 pounds broccoli
1 cup (6 ounces) raisins
1 red bell pepper, stem and
seed pod removed, diced
1/2 purple onion, minced
1/2 cup walnuts, toasted and
chopped coarsely
Zesty Lemon Parsley Dressing
1 teaspoon lemon zest
4 tablespoons fresh lemon
juice
3 tablespoons chopped fresh
