14 The Julian News Chef's Corner continued from page 6 Olive oil, if needed 2/3 cup thinly sliced purple onion 3 jalape-os, seeds removed, shell cut in thin matchsticks 1 tablespoon lime juice 2 teaspoons sugar 1/4 teaspoon salt 1/4 teaspoon ground black pepper 1. Preheat oven to 350 F. Coat large baking sheet with non- stick cooking spray. Arrange tortillas on sheet; spray lightly with cooking spray. Bake until crisp and beginning to brown, 6 to 8 minutes; transfer to 4 serving plates. Cut and reserve 12 thin avocado slices; dice remaining avocado. In large bowl, combine mixed greens, grapefruit chunks, jicama, queso fresco or feta and diced avocado. 2. In large skillet over medium- low heat, cook bacon until crisp; drain. Pour bacon drippings from pan into measuring cup. If necessary, add oil to make 1/4 cup. Return drippings to skillet; heat over medium heat. Add onion and jalapeno; cook until tender. Add lime juice, sugar, salt, pepper and reserved 3 tablespoons grapefruit juice; bring to a boil, stirring to incorporate the browned bits. Pour mixture over avocado mixture in bowl; toss gently and divide equally onto each tortilla. Crumble bacon over salads and garnish each with 3 avocado slices. Serves 4. * TIP: To open an avocado, cut lengthwise around the pit; gently twist to separate halves. To remove the pit, place half on a counter and strike with the blade of sharp knife; twist to remove. Scoop out the flesh with a spoon. To prevent cut or prepared avocados from darkening, cover tightly with clear plastic wrap and refrigerate. Before starting any project in the Julian Historic District, people should meet with the Julian Architectural Review Board and read the Design Guidelines Manual. The Architectural Review Board is here to assist owners, tenants, architects, and contractors in reviewing plans for the construction, modification, relocation, and demolition of structures in the Historic District. The County of San Diego Historic Landmark and District Preservation Regulations are found in Section 5700 of the San Diego County Zoning Ordinance. Section 5749 deals specifically with the Julian Historic District and says that a) the regulations apply to the Julian Historic District, b) The external appearance of structures shall resemble as closely as possible the appearance of buildings existing in Julian in the period 1870-1913. c) that a (this) design manual has been adopted by the Director and approved by the Board of Supervisors considering the recommendations of the Julian Historic District Architectural Review Board (ARB) and d) site plans within the Historic District shall he referred to the ARB, which will then advise the Director as to conformance with ordinances, general and specific plans, and other regulations. The Architectural Review Board meets on the first Tuesday every month, at 7:00pm, in the Town Hall, Washington and Main Streets. Back in the fifties the trees along Duffy's Lane by the Methodist Church were tall and beautiful. Today...the picture says it all. We feel helpless against the pine beetle and oak borer but perhaps we could find a way to protect our trees from chain saws.
