14 The Julian News Chef's Corner continued from page 14 1/2 tablespoon hot sauce 1 1/2 cups plain or whole- wheat Panko breadcrumbs or finely crushed cornflakes 1 cup ground pecans 1 tablespoon paprika 1/4 teaspoon cayenne pepper 3 tablespoons vegetable oil -- do not crowd the pan. Cook 3 minutes on each side or until fish flakes easily when tested with a fork. Repeat with the remaining oil and fillets. Serve immediately. Serves 6 to 8. TIPS: Poultry seasoning typically contains sage, thyme, marjoram and rosemary, all of which are delicious as a seasoning for fish. The buttermilk helps the coating to adhere 1. Using a medium-size bowl, combine the buttermilk with egg, 1/2 tablespoon of the poultry seasoning and 1/2 teaspoon of the salt and the pepper and the hot sauce and mix well. Set the bowl aside. 2. In another bowl, combine the breadcrumbs or cornflakes, ground pecans, paprika, cayenne pepper and the remaining poultry seasoning, salt and pepper. Mix well. Dip the fish fillets in the buttermilk mixture, then into the seasoned crumb mixture. 3. Place 2 tablespoons of oil in a large, non-stick pan and place over medium-high heat. Brown fillets in batches, 2 to 3 at a time to the fish. If you don't have buttermilk on hand, you can make a substitute by combining 1 tablespoon of lemon juice or vinegar with 1 cup of milk. Stir and set aside for 5 minutes before proceeding with the rest of the recipe. Cod or catfish fillets also work well in this recipe. When compared to the size of their body, Chihuahua's have the largest brains of any dog breed. Whether this makes them highly intelligent or too smart for their own good is probably up for debate. Ask Pastor Rick Religion In The News Court of Appeals: "Under God" is not a prayer In 2002, the federal court declared the words "under God" in the Pledge of Allegiance to be an unconstitutional endorsement of religion. In a recent ruling it said the phrase invokes patriotism, not religious faith. The Ninth U.S. Circuit Court of Appeals in San Francisco, in a 2-1 ruling said the ritual is not a prayer, but instead "a recognition of our founders' political philosophy that a power greater than the government gives the people their inalienable rights. Thus, the pledge is an endorsement of our form of government, not a religion or any particular sect." The dissenting judge, Stephen Reinhardt, writes, by adding "under God" to the pledge shows conclusively that it was intended to "indoctrinate our nation's children with a state-held religious belief." Is sounded very credible to me. What do you think? There is a church in Ethiopia that has claimed for years to be in possession of the Ark of the Covenant. Yes, that is true. But that is about all we know. They have never allowed archaeologists to inspect the relic or test it for authenticity. This has led many scholars to believe that, at best, what they possess is merely a copy. The Patriarch of the church has repeatedly promised to allow inspections but so far has failed to deliver on them, leaving me to believe that whatever they have is an object of faith only for Ethiopians. Another campaign suggestion is the enacting of smoke-free air laws that apply to all workplaces and public places, and the implemention of well- funded tobacco prevention and cessation programs. Tobacco use is the No. 1 cause of preventable death in the United States, killing more than 400,000 people and costing $96 billion in health care bills each year. While the nation has made significant progress in reducing youth smoking, 20 percent of high school students still smoke. On Kick Butts Day, kids turned the tables on Big Tobacco with events that ranged from "They put WHAT in a cigarette?" demonstrations to mock-funerals for the Marlboro Man to rallies at state capitols. For example, students at Middle Park High School in Granby, Colorado, gave free turkey sandwiches at lunch to anyone who pledged to quit using tobacco "cold turkey." Students in the Steamboat Springs area participated in a Facebook and texting campaign to encourage area youths to become fans of Kick Butts Day and/or the Campaign for Tobacco-Free Kids, helping raise awareness of the problems associated with tobacco use. Bearing Fruit continued from page 12 built 3 boxes and picked up and delivered 2 yards of topsoil to the garden sites. Liza Elkins donated the wood. Jim Mazzone provided a large roll of hardware cloth to protect the tender roots from munching furry faces underground. Michael and Monica Galina brought wood and tomato supports. Kathleen Beck, Laurel Granquist, Lorien Lehmer and others have been keeping the young things watered as the heat increases. Others are joining in and more are expected.
