Bacon-Wrapped Garlic Baked Potatoes These wonderful potatoes also can be prepared on the grill. Wrap the bacon-wrapped potatoes in foil and place them in the cooler area of the grill around the outer edge for about 50 to 60 minutes or until the potatoes are tender and the bacon is crisp. 4 medium baking potatoes, washed, halved lengthwise 8 cloves of garlic, chopped 1 medium onion, thinly sliced 1 teaspoon salt 1 teaspoon pepper 8 bacon strips Pre-heat the oven to 325 F. Lightly spray a baking pan with cooking spray or coat it with vegetable oil. Place four of the potato halves, cut side up on the pan. Layer the garlic and the onion slices on the cut side of the potato halves. Sprinkle the potatoes with the salt and pepper. Top each potato with the other potato half. Wrap each potato with two bacon strips and secure the strips with toothpicks. Bake the potatoes, uncovered, for 1 hour and 20 minutes or until the potato is tender when pierced with a fork and the bacon is crispy. Discard the toothpicks. Serve with butter, sour cream and shredded cheddar cheese, if desired.
