GEOGRAPHY: What are the names of the four U.S. states whose comer borders meet in one point? continued on page 15 Chef Kue Wynola Pizza Express/78 Bistro Warm Julian Apple and Fennel Salad - Accompanied by Herb Crusted Pork Tenderloin and Cherry Reduction Warm Jufian apple and fennel salad: Serves 4 Julian apples (cut into wedges) 3 each, Fennel (sliced thinly) 1 each Carrot (peeled and cut into' match sticks) 1 each Celery (cut into match sticks) 2 pieces Red & Green bell pepper (cut into match sticks) 1 each Herb Crust 4 ounces Olive oil % cup Salt and Pepper to taste Procedure: place all ingredients into a roasting pan. Roast at 350 degrees for 30 minutes. Once roasted, remove and cool down. Herb Crust: serving 2 cup Thyme (chopped) 2 ounces Oregano (chopped) 2 ounces Rosemary (chopped) 2 ounces Parsley (chopped)1 bunch Fresh Garlic 2 ounces Lemon Zest 4 ounces Salt & Pepper to taste Olive oil 4 ounces Procedure: place all ingredients into a food processor and puree for 2-3 minutes. Store herb crust in an air tight container. Herb crusted Pork Tenderloin: serving 4 Pork tenderloin (silver skin and fat trim : cut into 6 ounce portions) 4 each Herb crust 8 ounces Salt & Pepperto taste Procedure: Season the pork tenderloin with salt and pepper. And then take the herb crust and rub it with the pork tenderloins. In a sauteed pan, sear the tenderloin in hot oil and finish in the oven at 350 degrees for 10 minutes Cherry Reduction: serving: I cup Fresh cherry (remove stem and seeds) 1 cup Pork stock cup Red wine cup Sugar 1 ounce Salt & pepper to taste Procedure: in a sauce pot, cook everything together for 20 minutes over medium heat. Remove and puree.
