Preheat oven to 375 F. 2. To prepare crust: Coat a 9-inch pie plate with cooking spray. Roll dough to an 11-inch circle. Fit the dough into the prepared pie plan. Fold edges under and press with a fork around the edge. 3. To prepare filling, whisk the eggs lightly for 1 minute. Add in pumpkin and condensed milk and stir to combine. Add the cinnamon, allspice, salt, nutmeg, ginger and cloves. Pour the filling into the prepared crust. 4. To prepare streusel, lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, brown sugar, oats, walnuts or pecans, cinnamon, salt and ginger in a bowl. Cut in butter with a fork or fingertips until crumbly. Chef's Corner continued from page 6 Crust: 1/2 (15-ounce) package refrigerated pie dough (such as Pillsbury) Cooking spray Streusel: 1/3 cup whole-wheat pastry flour (about 1 1/2 ounces) 1/3 cup packed Splenda brown sugar for baking 1/4 cup regular oats 1/4 cup chopped walnuts or pecans 3/4 teaspoon ground cinnamon 1/4 teaspoon salt 1/8 teaspoon ground ginger 2 tablespoons chilled butter, cut into small pieces 2 to 3 teaspoons cold water Sprinkle with water, tossing with a fork just until lightly moistened. 5. Sprinkle the streusel on the pumpkin filling. Place the pie on a baking sheet. 6. Bake at 375 F for 25 minutes and then rotate the pie so that it bakes evenly. Continue baking for another 25 minutes or until a knife inserted in center comes out clean. Remove from baking sheet; cool completely on a wire rack. Serve with light whipped topping, if desired.
